PASTA : The BEST Pasta Dish

If you don't have a go-to pasta dish in your back pocket, you should - for a last minute anything.


Requirements:

  • Easy

  • Balanced

  • Big batch

  • Eat hot or cold


What is it?

Chicken Florentine Pasta Salad


Some tried and true options:

  • Substitute with shrimp

  • Add scorched cherry tomatoes before onions

  • Add scorched sweet peppers before onions


What You'll Need

  • Orzo (or any pasta really, but only non string ones if eaten cold)

  • Garlic

  • Onion

  • Oregano

  • Spinach

  • Parmesan cheese or similar (shredded)

  • Chicken breast (cooked preferred)

  • Tomatoes + Peppers optional


For The Daring (TLDR)

  1. Boil pasta per instructions (olive oil and salt water), rinse til cool enough to touch, let drain

  2. Scorch tomatoes/peppers in olive oil on medium high heat first if adding those or skip to 3

  3. Sautee onions on medium, add garlic and oregano when translucent, stir a bit and add protein, stir til heated through

  4. Add pasta, stir, add parmesan, mix and adjust salt, pepper to finish


Notes:

  • Put in containers ASAP to stop cooking, lid partially on counter until cool enough to refrigerate

  • You CAN eat it straight out of the fridge. I have. But I like to stir it a bit and let it sit on the counter for 10 minutes. Or if you can't wait, microwave for 30 seconds (2 minutes if you want it hot - it's damn good hot) and stir.
