No knead to thank. Get it?
Ok let's do this.
What You'll Need
Soup bowl size of all purpose flour
Dime size palm heap of yeast (not instant or rapid)
Water
Salt
Pizza peeler or cookie sheet. Pizza stone. Dutch oven optional. Cookie sheet works in a pinch.
For The Daring (TLDR)
Put the flour, yeast, and a 3 finger pinch of salt in a bowl and stir around with fork or whisk (or sift if you want to punish yourself)
Heat some water. Warm to the touch but not too hot to touch
Pour in water a little at a time and stir well. There should be no dry flour dust in the bowl and the dough is sticking a little to the fork
Cover with plastic wrap or bread cloth (or a few layers of cheese cloth). Leave on the counter for 12-18 hours
Bake: preheat oven with pizza stone or cookie sheet on middle rack we'll to 450. If using pizza stone give it another 10-15 mins after it reaches 450
Flour pizza peeler or upsidedown cookie sheet
Dusk flour around the edge. Then pull the edges up and away from the bowl, and fold into center
Repeat until the dough can be lifted out of the bowl and the bottom is floured. The outside shouldn't stick to your hands
Dust the top and flip over. Form into a round mound and place on pizza peeler or cookie sheet
Open the oven and use your peeler (or pretend cookie sheet peeler) to shake the dough onto the hot pizza stone or cookie sheet
Bake for about 30 or minutes. DO NOT open oven door. Use the oven light and check that the crust color becomes a dark golden color
Remove and place on a rack or a hashtag of chopsticks to cool for 30 minutes. DO NOT skip the cooling
That's it - there's no long version.
Store under a bread towel. I'll add a quick post about reviving bread soon so check back. In the meantime, enjoy your terrible fresh home-made bread.
