WHY TERRIBLE RECIPES?

It might seem a bit counter intuitive, but not everyone likes superb recipes.

Look, for a while I was home alone after school. It was just me and my mom who worked 12 hour days plus commute, and she was never the best cook to begin with. So I basically had the Food Network as my baby sitter. And I guess after years of making myself scrambled eggs and upping my youth body's cholesterol, I learned to eventually experiment with food. So what does that mean?

When I cook, I go by feel. It means using my senses to make decisions, and so there's not a lot of written down measurements. Don't get me wrong, this is actually more precise when it comes down to it. Why? No two chickens are exactly the same, and most of us live in parts of the world where temperatures and humidity vary from day to day. Plus, most of us out there don't all use the same equipment. So it comes down to the basics, a little common sense, and a lot of practice.
